The scone is a basic component of English the cream tea and something Americans have embraced and made their own. We will make one recipe of savory scones (Ham, Cheddar & Chive), and a sweeter recipe with dried fruits. While the scones are baking we will work with pre-made puff pastry and explore ways to create delicious baked goods with this versatile product.
Exploring Phyllo Dough: Baklava & Spanakopita

Baklava is a rich, sweet dessert pastry made of layers of phyllo filled with chopped nuts and sweetened and held together with syrup. Spanakopita meaning "spinach pie", is a Greek savory pastry, typically with spinach and feta cheese filling. We will make both of these pastries with a focus on how best to work with the temperamental phyllo dough.
Thanksgiving Baking: Pumpkin Roulade & Traditional Mincemeat

Thanksgiving is a time for traditional and familiar foods but there is always room for something new. Pumpkin Roulade is something new to some and a beautiful addition to your holiday dessert line-up. Mincemeat on the other hand is a traditional food that has always been popular in Britain and is seeing a revival in the U.S. We will make a traditional suet mincemeat, enough for once large pie or wherever your creativity takes you.

In this class we will make 3 different cookies that are simple, tasty and elegant. The last thing you need at the holidays is more stress, these doughs can be made ahead, frozen and used when needed. Cookie menu: Peppermint Candy Cookies (cookies that resemble spiral peppermints), Chocolate Dipped Walnut Shortbread & Stained Glass Sugar Cookies.
Gingerbread House (2-night course)
December 9th & 10th 2020 5:30-9:00 PM (2-night workshop)
In this two part course we will do everything from making the dough, baking and assembling the house. Although time consuming, this is a fun and rewarding activity that if stored carefully can be enjoyed for years to come.

A Yule log is a traditional dessert served near Christmas. Made of sponge cake to resemble a miniature actual Yule log, it is a form of sweet roulade. A fun addition to your next holiday gathering.
